Sichuan pepper is the fruit of a citrus family plant that is completely unrelated to real pepper. This spice is mainly used as an addition to food, as a seasoning. It is most often used in dishes with meat and poultry, in Chinese cuisine. This spice should not be abused, as in large quantities it causes a feeling of numbness in the mouth. Sichuan pepper has a moderately spicy taste. Perfumers like its woody-spicy aroma, reminiscent of musk, earth and lemon. Sichuan pepper is perfectly combined in perfume compositions with anise and ginger.
