Mate – Synonyms: Paraguayan holly, Hierba mate, Yerba mate (Spanish); Erva mate (port.); Yerba Mate. It belongs to the holly family (Aquifoliaceae). The plant mainly grows in Central and South America. It has a tea-like, smoky-phenolic taste with a hint of forest herbs. The leaves of the plant are used in the perfume industry. Mate essential oil is obtained by solvent extraction. The result is a thick, semi-solid liquid of dark green color, soluble in alcohol, insoluble in water. Mate is used in perfumery to add a green note to floral arrangements. The green note of the mate is soft, rounded – unlike most "green" flavors. It gives the compositions a tea, herbal aroma with notes of hay, phenol, tobacco.
